Peanut Butter Banana Bread

Why make banana bread when you can make PEANUT BUTTER banana bread? Bonus: this stuff makes the very best French toast, a.k.a. it's French toastable. You can also fold in chocolate chips, walnuts... anything your wild heart desires!

6 very ripe bananas
3 eggs
4 T coconut oil
2 T vanilla
2 T honey
¾ c peanut butter
½ c almond flour
1 T cinnamon
pinch salt
1 t baking soda
1 t baking powder

Beat first 8 ingredients in a stand mixer until smooth. Add baking soda and baking powder and mix well. Grease 8x4 inch loaf pan with coconut oil and pour in batter. Bake at 350 degrees for approximately 60 minutes or until a knife inserted into your loaf baby's center comes out clean. Let cool on a cooling rack. Smother in nut butter and fresh fruit and enjoy!
